Summer & Strawberries

          Summer is here and so are fresh strawberries.  Here are links to gluten-free recipes which incorporate these little gems of sweetness.  Some of the links below are from  I have purchased some of her products, e-books, and tried many of her recipes.  I can attest to the fact that her website is a wonderful resource.  Cook, bake, and enjoy until your belly is content! :)


           The above recipes call of a special gluten-free cake mix or All Purpose Gluten-Free Mix.  You can purchase Jules’ Mix at her website or you can use the recipe which she shares.  It is a basic recipe which can be substituted in many of her recipes.  I have a large container made in my cabinet and waiting.  That way whenever I wish to bake I do not have to mix it first.

All Purpose Nearly Normal Gluten-Free Flour Mix from Jules Shepard:

1 c. White Rice Flour

1 c. Potato Starch

1 c. Cornstarch

1/2 c. Corn Flour (I use Sweet Sorghum Flour.)

1/2 c. Tapioca Flour

4 tsp. Xanthan Gum

**I also add 1/2 c. Almond Meal for extra flavor.

          Other gluten-free “All Purpose” Mixes are available on-line.  Find the one that works best for you.  I personally have a taste aversion to quinoa flour and brown rice flour.  One smells like mildew and the other smells and tastes like copper to me.  I know. I am strange.
